Recipe: Chocolate Reindeer Brownie

Looking for a fun activity to do with the kids over the festive period? Wanting to wow your guests with a Christmassy treat? Or do you just fancy getting into the spirit with a spot of creative baking?!

We have the perfect recipe for you. Our chocolate Reindeer Brownie has been going down a storm over the past month, amongst big and little kids alike!

The chocolate brownie base is topped with chocolate buttercream, melted milk chocolate and decorated with pretzel antlers, edible sugar eyes and a red Candy Melt nose!

And as Christmas is a time for giving, we thought that we would share our original recipe with you:

You will need:

Brownie batter

123g dark chocolate
1/2 block unsalted butter
57g plain flour
27g cocoa powder
183g sugar
2 eggs

Chocolate buttercream

1 block room temperature unsalted butter
850g icing sugar
170g cocoa powder

Toppings

200g milk chocolate
24 x pretzels
24 x Wilton edible eyes OR chocolate buttons
12 x red Candy Melts

Method:

Make the brownie batter

Pre heat oven to 150 degrees C.

Melt the dark chocolate and butter together in the microwave/on the hob.

Whisk the sugar and eggs until pale and slightly frothy.

Carefully add in the flour and cocoa powder and combine.

Pour in the melted chocolate and butter, mixing until smooth and glossy.

Add brownie batter to 8” greased cake tin and bake for 1hr 15 mins.

Meanwhile, make the buttercream

Combine ingredients and mix until smooth.

Tip: If you find the buttercream to be a little sloppy, add more cocoa, if it’s too dry, add a touch more butter.

Ensure the brownie is cooled completely before the next step.

Build your brownie

Using a small pallet knife, cover with smooth layer of chocolate buttercream and chill.

Melt 200g milk chocolate and pour over chilled buttercream, tipping the tin to help cover evenly. Set aside.

Once the chocolate layer is set, cut into 12 slices, like you would a cake.

Assemble the pretzels, edible eyes and candy melts onto each slice using a dab of melted milk chocolate.
